Wonton Noodle Soup.

The key to a great wonton noodle soup (or in my humble opinion, any soup!) lies in its broth, but I think the addition of the sauce really take this soup to another level!
This dish is honestly one I come back to again and again because is so quick and delicious! The broth is rich, tangy, salty and spicy - perfect served piping hot on a cold winter’s night.

Ingredients
Soup:
16 frozen prawn and chive wontons (4 per serving)
200g dried egg noodles
2 tbsp sesame oil
4 cloves garlic, crushed and finely sliced
3cm piece ginger, peeled and finely grated
4 x star anise
1.5L salt-reduced chicken stock
90mL cup salt-reduced soy sauce
1 bunch Chinese broccoli, roughly chopped into quarters width-ways
1 carrot, julienned
1-2 limes, juiced
Sauce:
¼ cup freshly chopped chives
2 tbsp freshly chopped coriander
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp caster sugar
3 tbsp light soy sauce
2 tbsp rice wine vinegar
2 tbsp chilli oil - I use the Lee Kum Kee Chiu Chow Chilli Oil or my own!
1 tsp sesame oil
Instructions:
1. In a large saucepan of boiling water, cook wontons for 10 minutes. Add noodles in the last 3 minutes of cooking or until wontons are cooked and noodles are tender.
2. Drain and set aside. Pour 1 tsp of sesame oil over noodles and dumplings to prevent sticking.
3. Heat oil in a large saucepan over medium heat. Add garlic, ginger, and star anise. Cook, stirring, for 2 minutes or until fragrant.
4. Add stock and soy sauce, then bring to a boil. Reduce heat and simmer for 15 minutes.
5. In the meantime, prepare the serving sauce:
Heat oil in a small pan over medium heat. Add ginger and garlic, sauté until softened. Add remaining ingredients to a small bowl. Then, add sautéed ginger and garlic to the bowl. Stir to combine.
6. Next, add the Chinese broccoli stems and carrot to the pot. Cook for 1 minute or until just tender then add the Chinese broccoli leaves and cook for a further minute.
7. Stir through lime juice. Start with the juice of 1 lime, taste, then add more according to preference.
8. Ladle broth into the bowls, over the noodles and wontons.
Serve topped with sauce, additional chives, and fresh chili, as desired.
Tips:
“Chan’s Yum Cha Prawn and Chive Wontons” and “Mr Chen’s Prawn and Chive Wontons” that you can buy from Coles or Woolworths both work well, but you can really choose any filling you like!
It’s important to use fresh limes, store bought/bottled lime juice won’t enhance the flavour of the broth in the same way.
