Smashed Minty Peas with Pickled Onion.

This side dish is bright, crunchy, zesty, minty and light with a combination of peas, pickled onion, mint and my favourite toasted seed and nut mix!

A fabulous addition to a roast or something of the like.

Ingredients:

For the Pickled Onions:
1/2 Red Onion, thinly sliced
1/3 cup White Vinegar
2 tsp Salt
1 tbsp Sugar
1/4 cup Water

For the Smashed Peas:
500g Frozen Peas
1/2 Lemon, juiced
1/3 cup Fresh Mint, chopped (plus 4 sprigs for cooking)
¼ cup Pepita, Almond, and Sunflower Seed Mix (toasted)
Salt & Pepper to taste

Instructions
1. Pickle the Onions: Combine the sliced red onion, white vinegar, salt, sugar, and water in a small bowl. Set aside to pickle while you prepare the peas.

2. Cook the Peas: Cook the frozen peas with two sprigs of mint in a large saucepan of boiling water for 5 minutes, or until tender. Drain the peas, reserving 1/2 cup for later.

3. Smash the Peas: Transfer the remaining pea mixture (excluding the reserved portion) to a food processor. Add the lemon juice, season with pepper, and process until the mixture reaches a smooth consistency.

4. Fold in Reserved Peas: Add the reserved 1/2 cup of whole peas to the smashed pea mixture and gently fold them in to create some texture.

5. Assemble and Serve: Spoon the smashed peas onto a serving platter or bowl. Top with the pickled red onions and the toasted seed and nut mix.
