Pico de Gallo.

Pico de Gallo is a vibrant salsa, best served with corn chips and guac it’s a perfect snack to nibble on with drinks!

Although, I also prepare a pico de gallo as an accompagnemént (it’s more fun to say in French) to most Mexican dishes.

Serves: 4-6
Prep time: 10mins

Ingredients
1 punnet cherry tomatoes, diced
1/4 red onion, finely chopped
1/3 cup Fresh Coriander, chopped
Juice of 1 Lime
1/4 cup Olive Oil
Salt and Pepper to taste

For the Guacamole (Optional):
2 Avocados, mashed
Juice of 1 Lime
Salt and Pepper to taste

To Serve:
Mission White Corn Chips (or your favourite tortilla chips!)

Instructions
1. Combine the diced tomatoes, chopped red onion and chopped coriander in a bowl. Pour over the olive oil, lime juice, salt, and pepper. Toss to combine.

4. Make the Guacamole: Mash the avocados in a bowl until they reach your desired consistency. Add lime juice, salt, and pepper to taste. Set aside.

Place the pico de gallo and guacamole in smaller serving bowls alongside the your corn chips.
