Greek Salad.

This classic Greek salad is a mix of fresh, vibrant ingredients that capture the essence of the Mediterranean. Juicy tomatoes, crisp cucumbers, briny olives, and creamy feta cheese all come together in a simple yet super flavorful dish.

Ingredients
Salad
2 lebanese cucumbers, chopped into quarters
2-3 large tomatoes (variety of your choice), roughly chopped
1/2 large red capsicum, chopped into large squares
¼ red onion, finely chopped
120g kalamata olives (about 20 olives), cheeks sliced off (all sides) and pit discarded
1 tbsp dried oregano
200g feta cheese, cut into 1cm cubes

Dressing
85mL (about 1/3 cup) extra virgin olive oil
3 tbsp red wine vinegar
Salt and pepper, to taste

Instructions
Make the Dressing:
1. Combine all greek salad dressing ingredients, stir to mix together and set aside.

Prepare the Salad Ingredients:
1. Tomatoes: Cut vertically into 1cm thick slices. Cut each slice in half, then roughly chop again into 3-4 pieces.
2. Cucumbers: Slice cucumbers into 1/2cm (1/5") rounds, then again into quarters.
3. Onion: Peel and finely slice the red onion.
4. Capsicum: Cut into large squares.
5. Feta: Cut feta cheese into 1cm (2/5") cubes.

Assemble the Salad:
1. In a large bowl or serving platter, combine chopped tomatoes, capsicum, cucumbers, sliced onion, and olives.

2. Pour the prepared salad dressing over the ingredients and toss gently to combine.

3. Top with feta cheese cubes and sprinkle with oregano.

Serve immediately and enjoy!
