Chimichurri.

This is a super easy, super tasty condiment. It’s so fresh, and zesty with a hint of chilli to spice things up!
I usually always make this to serve with my steak. But try pairing with other foods too, it goes so well with burritos, or even over roasted veggies.
Prep Time: 5mins
Ingredients:
1-2 bunches coriander, leaves only
1/3 (80ml) cup extra virgin olive oil
3 tbs red wine vinegar
1 red chilli, seeds removed, chopped
1 garlic clove, crushed
Pinch of salt
Extra salt and pepper, to taste
Instructions:
1. Place all ingredients in a small food processor or blender and blitz until smooth.
2. Taste test, add additional salt and pepper to taste
Tips:
• The stems aren’t included as it makes the chimichurri too watery and dilutes the flavour. Keep the stems to use in salads, curries and other recipes!
